Fall Recipe–Creamy Chicken & Broccoli Soup

Here is a yummy creamy chicken and broccoli soup with tarragon recipe that is comforting and filling! It was passed down from my mother-in-law who was in the catering business. I make it for my family and we all love it! You can switch out the vegetables or add different ones as you like. Portobello mushrooms are incredible with this! Sautee them first in butter before you add them.

Fall Recipe–Butternut Squash Soup

For most of us in the United States and Canada, it’s now autumn or fall! That means people are looking for new soups and stews to try, or perhaps a new apple recipe! I will be posting these recipes on Saturdays and Sundays so you will have time to add ingredients to your shopping lists for the following week.

Thanks to Kim Kautzer for our first recipe! If you can’t tolerate cow’s milk, just use your favorite kind. Here’s what she wrote:

It’s easy and yummy. A friend brought this soup to a gathering, and it’s become one of our favorites—flavorful and comforting, with just a hint of spice and heat. Easy, too! With a salad and bread, it’s a meal by itself, but you can also serve it as a first course.

Make It Simple–Reader Recipe

The other night I was on Facebook, and my good buddy Monica MacDonald said she was going to experiment with coconut milk and chicken. I told her to let me know how it went. It was so simple, she was able to post it in a COMMENT! Now THAT’s what I call an easy recipe! Here’s what she had to say:

I used lemon, because I had one my brother sent from California, but I’d use lime next time. Cut up 1 1/2 chicken breasts into chunks and squeeze line juice over top. Pur 1 can coconut milk in a saucepan. Add some lime zest, ginger, and red curry powder. Bring it to a simmer. Throw in the chicken and cook until the chicken is done. Serve on top of bowls of rice. YUM.

Yummy, Easy Cereal Bars!

I was just making these and realized I really should share this recipe. It’s so easy and yummy, and it can be gluten/casein-free or not! You can add lots of nutrion in different ways, and it can pack in lunches or picnics, too. Now that’s what I call a recipe that needs to be shared!

If you are gluten-free or GFCF, you’re going to use the appropriate ingredients, of course. When I have the money, I buy a box of Enjoy Life’s Crunchy Flax cereal. This adds a LOT of fiber and protein. You can also add two tablespoons of ground flax seed for a nutrition boost. Finally, you can add nutrition by the add-ins you use–walnuts, almonds, cranberries, etc.

Easy Cereal Bars:
1 c. Honey (Original recipe called for 1 1/4 c., but that was too sweet for me. Don’t go under 1 c., or it won’t hold together.)
1 c. Peanut butter
1 c. Oats (click here for how I save on g-free oats)
4 c. Puffed rice cereal or flax cereal (whole box)
2 c. add-ins of your choice (choc chips, nuts, dried fruit)

Melt honey and peanut butter in very large microwave-safe bowl or on low-medium heat on stove. Melt until well-mixed. Add in cereal and oats. Start mixing. Toss in add-ins. Finish mixing. Dump into 13×9 pan and spread. Chill in refrigerator for 30 minutes or more. Cut and store. Wrap in wax paper or plastic wrap in individual bars and freeze if you like! Great for breakfast or snacks!
